Celebration of Singapore Culinary Heritage

With its rich multi-cultural heritage, Singapore is renowned for being a melting pot of various cuisines and cultures. From 1 to 31 August 2019, revel in a kaleidoscope of authentic local delights and experience Singapore’s rich culinary heritage and diversity.

Refresh your palate with the zesty Fruit Rojak at the salad station. ‘Rojak’ which means “an eclectic mix” in Malay, is an iconic creation which brings together disparate items into a harmonious blend of sweet and savoury flavours, reflecting the cultural diversity of Singapore.

Nothing is heartier than a comforting bowl of Teochew Style Bak Kut Teh (pork rib soup) with succulent pork ribs in delicious, peppery broth.

Satiate your appetite with the traditional Hainanese and Roast Chicken Rice, Roast Pork Belly and Char Siew (barbecued pork) at the carving station and delve into the aromatic flavours of the signature Nyonya Laksa comprising thick rice vermicelli meticulously cooked in rich gravy prepared with lemongrass, chillies, shallots, galangal, turmeric, spices, dried shrimp and coconut milk and topped with generous servings of prawns, fish cake and tofu puffs.

Our popular repertoire of evocative local signatures also includes Salted Egg Slipper Lobster, Fried Carrot Cake, Stir-fried Hokkien Mee, Satay Bee Hoon, Singapore Style Chilli Lala (clams) and more.

Continue your gastronomic journey with perennial Peranakan classics including Kueh Pie Tee (crispy pastry shell filled with cooked shredded turnip, prawn and egg), Black Fungus Kerabu Salad (spicy and tangy salad with black fungus), Nyonya Achar (Straits Chinese spicy mixed vegetables), Ayam Buah Keluak (chicken braised in a thick, spicy tamarind gravy with Indonesian black nuts), Babi Pongteh (Nyonya style braised pork with fermented soy bean sauce), Nyonya Chap Chye (mixed vegetable stew), Itek Sio (braised tamarind and coriander duck), Steamed Fish “Nyonya Style” , Nasi Kunyit (turmeric rice) and Nasi Ulam (rice with mixed herbs).

A celebratory meal is never complete without delightful desserts. The Singaporean theme continues at the dessert section with a spectacular medley of nostalgic local sweet treats and Peranakan delights such as DIY Ice Kacang (refreshing dessert made of shaved ice, sweetened red bean, attap seed, cream, corn, agar agar, evaporated milk and gula melaka), Chendol Mousse Cake, Chocolate Rice Ball, Apom Balik (gula melaka pancakes with banana caramel sauce), Bubur Cha Cha (coconut based dessert with colourful tapioca cubes), Tau Suan with Yu Char Kueh (mung bean dessert with crispy dough fritters), Ice Jelly with Fruit Cocktail and the all-time favourite, Durian Pengat (creamy durian purée).

Items above are available on a rotational basis. The buffet is priced at S$52++ for lunch and S$68++ for dinner. Child aged 6 to 12 years old enjoys half price.
